Along with Lao staples like khao niaw (sticky rice), tam mak houng (spicy green papaya salad) andlaap (minced meat salad), Bokeo’s table offers several provincial specialties.

Khao soi is the most “Lao” of the noodle soups, and Bokeo’s is among the best. Khao soi combines a “Bolognese sauce” of minced pork, fermented soy beans, and tomatoes with thin noodles in a hot broth. Lettuce and herbs can be added to taste.

A 15-minute ride south of Houei Xai to Ban Py Bounthong on weekends finds a series of salassellingkhao poun (rice-noodles in coconut sauce), and morning market stalls present khanom(sweets), paa douk (catfish), nor mai (baby bamboo shoot tips), and khai phaen (riverweed snack).
